Definition
A complete explanation of the intended meaning of a concept- Productos que pueden utilizarse como sucedáneos de los huevos frescos en recetas o como alimento (p. ej. la tortilla). Se elaboran a base de huevos frescos, ya sea i) batiendo y purificando el huevo entero o ii) separando la clara de la yema del huevo y después batiendo y purificando cada una por separado. El huevo entero, la clara o la yema purificado se elabora luego para producir huevos líquidos, congelados o en polvo.
- Products that may be used as replacement for fresh eggs in recipes or as a food (e.g. omelette). They are produced from fresh eggs by either (i) mixing and purifying the whole egg; or (ii) separating the egg white and yolk, and then mixing and purifying each separately. The purified whole egg, white or yolk is then further processed to produce liquid, frozen or dried eggs.
